Considering the short number of conversations they've had, Sanji respects Kairi a great deal, for her optimism and her insight. Sanji might've already come to a decision on how he views himself and Jixsan as separate entities, but Kairi presented interesting arguments he hadn't considered - it's impressive she got him talking at all, since he'd planned to wipe this under the table.

They didn't meet in Jixsan's AU and so he isn't bogged down by earlier, falsely-created perceptions; this actually makes it easier for him to talk to her, as opposed to say, Roxas or Riku. And he does like talking to her. She's sweet and kind, with a teasing streak in her, and tends to diffuse possible arguments before they escalate into something nasty. Sanji would like to get to know her better.
