Dubbing Yukito as his sous chef is one of Sanji's greater decisions, as it means if anything happens to him, Yukito inherits the restaurant and the responsibility that comes with it. And it's this responsibility that he trusts Yukito to understand, given how important cooking is to him.

So far, Yukito hasn't let him down. He's a great cook in his own right with a great attitude (and probably deserves a medal for brushing off Sanji's gruff demeanor with the same efficiency as any of the crew). It's easy to be around him. In his own way, Sanji counts Yukito as a friend whom he trusts a very important aspect of his life to.

Yue is a tougher case. Truth be told, Sanji views him with his own brand of fondness though the two rarely speak, and when they do talk, the replies Yue gives are not always interactive. That said, Yue's never done anything to make Sanji angry, which is fairly impressive given the chef's track-record. He's quiet and distant, but bearable to be around, and Sanji sees the two as separate entities sharing the same body. To him, that's more respectful/practical than denoting them to the same "soul" so to speak.
